Mint Chocolate Lasagna

Ingredients

FOR THE CRUST:

  • 22 Oreo Cookies
  • 6 Tablespoons of butter - melted
  • FOR THE LAYERS:

GREEN LAYER:

  • 1 package of Dark Chocolate Ghirardelli Mint chocolates
  • 1 package of Cream Cheese - 8 ounces - softened
  • 1 cup of Powdered Sugar
  • 2 cups of Cool Whip
  • 5 to 7 drops of Green food coloring Gel

CHOCOLATE PUDDING LAYER:

  • 1 large box of Chocolate Pudding - 6 - 8 ounces
  • 2 cups of Milk
  • 1 Cup of Cool Whip

TOP LAYER

  • 1 - 12 ounce tub of Cool Whip - thawed
  • 2 Tablespoons of Oreo crumbs
  • 2 Ghirardelli Mint's - chopped

Instructions

  • Place the Oreo's in a blender or food processor, and pulse until the cookies become chocolate crumbs.  Line a 9 X 9 dish with Parchment paper, making sure to leave the edges of the paper hanging over two sides of the dish.  Place the butter in a dish, and Microwave it at 10-second intervals until it melts.  Pour the batter over the crumbs, and stir well to blend.  Reserve 2 Tablespoons of crumbs for the top layer.  Press the Chocolate crumbs into the bottom of the dish, and place the dish in the freezer.
  • Open the Mints, and place them on a piece of Parchment paper.  Cut them into small pieces.  Remove the dish from the freezer, and sprinkle the pieces over the chocolate crust. Place the dish back in the freezer.
  • Place the Cream Cheese in the mixing bowl of a stand mixer, and blend until smooth and creamy.  Add the Cool Whip, Powdered Sugar, and Food Coloring Gel, and mix until well blended.  If the green color is not bright enough, add a couple of drops, and blend, and continue until you've reached the desired color.   Remove the dish from the freezer, and spread the green layer over the Mint pieces, smoothing out evenly in the dish.  Place the dish back in the freezer for at least an hour
  • In a large bowl, place the Chocolate pudding mix, milk, and Cool Whip, and whisk until thick and creamy.
