Ingredients

  • 1 1/4 pounds Roma tomatoes
  • 1 10 ounce can Rotel
  • 2 green onions roughly chopped
  • 1/3 cup red onion peeled and roughly chopped
  • 1 jalapeno pepper seeded and roughly chopped
  • 1/3 cup fresh cilantro
  • 1 large clove garlic peeled and roughly chopped
  • 2 tablespoons fresh squeezed lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon granulated sugar
  • Salt and pepper to taste

Instructions

  • Combine all ingredients in a food processor and pulse until all ingredients are finely chopped and the salsa reaches your desired consistency.
  • Cover the salsa and refrigerate for 1 hour, then taste and adjust seasonings as needed.
  • Store the salsa in the refrigerator up to 1 week.
