Strawberry Pie Filling

- 4 cups strawberries hulled
- ½ cup granulated sugar
- 2 Tbsp cornstarch
- 1 Tbsp lemon juice
- 1 cup water
- Pinch kosher salt
Slice the strawberries and place them in a large saucepan over medium heat with ¾ cup of water, sugar, lemon juice, and a pinch of salt.
Once the mixture begins to boil, reduce heat slightly and simmer for 5 minutes.
Mash the berries slightly with a potato masher or fork (note: you can skip this step if you prefer slices or larger chunks).
Mix together the cornstarch and remaining ¼ cup of water in a small bowl until well combined and pour into the saucepan.
Continue to simmer the strawberries for another 10 minutes, stirring occasionally, or until the filling thickens.
Remove from the heat and allow to cool completely before using or pouring into storage containers. Enjoy!
Store in an airtight container in the refrigerator for 5-7 days.
You can adjust the thickness of the filling by adding a few tablespoons of water.
