- 4 cups watermelon cubed
- 1 medium cucumber or English cucumber, diced and seeds removed
- ½ cup Feta cheese diced, or 8 oz crumbled feta cheese
- ½ cup basil or mint, chopped
- ½ cup red onion thinly sliced
- ¼ cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon honey
- ¼ teaspoon salt or more to taste
Directions
Add watermelon, diced cucumber, feta, basil and red onion to a large shallow salad bowl/dish.
Whisk together olive oil, red wine vinegar, honey and salt until combined.
Pour over salad ingredients, then gently toss.
Cover and chill in the refrigerator until ready to serve.
