Bacon Jam

Ingredients

  • 1 pound bacon thick cut, cut into small pieces
  • 2 large yellow onions finely chopped
  • 4 cloves of garlic minced
  • 1/3 cup brown sugar light or dark
  • 1/4 cup apple cider vinegar
  • 1/4 cup balsamic vinegar
  • 2 teaspoons fresh thyme more for garnish

Instructions

  • Cut the bacon into small pieces.
  • Add the bacon to a large nonstick skillet over medium-high heat and cook until browned and crisp.
  • Transfer the bacon to a plate. In the same skillet, reserve about 2 tablespoons of the bacon grease and add the finely chopped onions to the pan.  Cook the onions over medium-high heat until they are softened and just starting to turn brown.
  • Add in the garlic and cook for one minute.
  • Add the brown sugar, apple cider vinegar, and balsamic vinegar to the pan and cook everything together for 5 minutes.
  • Add the cooked bacon to the pan and mix everything together.  Continue to cook everything on medium heat for about 20 minutes.  The liquids should be absorbed and cooked out and you will be left with a jam-like consistency in the pan.
  • Serve immediately or save for later.  It can be served warm or at room temperature.
