Ingredients

  • 2 cups semisweet chocolate chips
  • 1/2 cup butter sliced
  • 10 ounce pastel mini marshmallows
  • 3/4 cup chopped toasted walnuts
  • 2 cups sweetened shredded coconut

Instructions

  • In a large saucepan over low heat melt your chocolate chips and butter until just melted and smooth.
  • Remove from heat and set aside to cool slightly. You want it still melted but not hot enough to melt the marshmallows.
  • Add the walnuts and marshmallows to the cooled chocolate mixture and stir to combine.
  • Separate the mixture evenly between 3 pieces of parchment paper.
  • Using the parchment paper shape the chocolate mixture into an 8-10 inch log.
  • Roll them carefully in the shredded coconut.
  • Wrap the parchment paper around the logs and place in the fridge to chill for at least 2 hours or up to overnight.
  • When ready to serve remove from the refrigerator and slice into ½-1 inch slices.
  • Serve!
