- 2 cups semisweet chocolate chips
- 1/2 cup butter sliced
- 10 ounce pastel mini marshmallows
- 3/4 cup chopped toasted walnuts
- 2 cups sweetened shredded coconut
In a large saucepan over low heat melt your chocolate chips and butter until just melted and smooth.
Remove from heat and set aside to cool slightly. You want it still melted but not hot enough to melt the marshmallows.
Add the walnuts and marshmallows to the cooled chocolate mixture and stir to combine.
Separate the mixture evenly between 3 pieces of parchment paper.
Using the parchment paper shape the chocolate mixture into an 8-10 inch log.
Roll them carefully in the shredded coconut.
Wrap the parchment paper around the logs and place in the fridge to chill for at least 2 hours or up to overnight.
When ready to serve remove from the refrigerator and slice into ½-1 inch slices.
