Bacon Wrapped Asparagus

Ingredients

  • 1 pound asparagus trimmed
  • 6 slices bacon thinly sliced
  • 1 tablespoon olive oil
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • Pre-heat oven to 425' and line baking sheet with parchment paper
  • Wrap 3 stalks with one slice of bacon to make a bundle. Repeat.
  • Place bundles on a parchment paper lined baking sheet.  Brush with olive oil and sprinkle with salt and pepper. Place in the oven and bake for 15 minutes. Then broil them for an additional 2-3 minutes for a nice crisp on top of the bacon.
  • Brush the balsamic vinegar on top of the baked asparagus bundles. Serve!
