Dutch Apple Pie Cookies

Dutch Apple Pie Cookies with Granny Smith apples, pie dough and a streusel topping are delicious.

Ingredients

Cookie Ingredients:

  • 1 pie dough refrigerated
  • 5 granny smith apples
  • 1/4 cup sugar
  • 1 tsp ground cinnamon
  • 2 tbsp lemon juice fresh
  • 1 tbsp cornstarch

Streusel Topping Ingredients:

  • 2 1/4 cup flour
  • 2/3 cup packed brown sugar
  • 2/3 cup sugar
  • 2/3 cup old fashioned oats
  • pinch of salt
  • 3/4 cup + 2 tbsp unsalted butter melted

Cookie Directions:

  1. Preheat oven to 350 degrees.
  2. Prep the muffin tin by spraying the with baking spray
  3. Prep the apples by peeling, coring, and finely dicing them then set them aside
  4. Roll out dough onto a lightly floured surface, and cut out circles about 2 inches in diameter
  5. Gather and re-roll unused dough and cut additional circles, if needed
  6. Place the circles in the bottom of each muffin well
  7. Using a medium saucepan, on medium heat add the apples, sugar, lemon juice, and corn starch.
  8. Stir and continue to cook for about 5-19 minutes
  9. The apples should soften slightly and the liquid should begin to thicken
  10. Take off the heat
  11. Add one tablespoon of the apple mixture on top of each pie dough
  12. Streusel Topping Directions:
  13. Add the flour, brown sugar, sugar, oats, and salt to a medium bowl and mix till combined
  14. Add the melted butter and mix until all is combine
  15. Top off each apple mix with a tablespoon of the streusel
  16. Press topping down over the apples
  17. Bake at 350 degrees for 17-19 minutes
  18. Remove from the oven but allow the cookies to cool in the muffin tin for about 10 minutes
  19. Use a dull knife to gently remove the cookies from the tin
  20. Transfer the cookies on a wire rack and drizzle with caramel sauce
