Cheesy Carrot Casserole

Ingredients

Cookies

  • 3 Tablespoons Butter - Salted
  • 1 medium onion - chopped
  • 4 Tablespoons flour
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 cup milk
  • ½ cup cream
  • 2 cups cheddar cheese - shredded
  • 3 ½ cups carrots - sliced cooked until just tender and drained
  • 1 Tablespoon dried parsley flakes

Topping:

  • 3 Tablespoons Butter - Salted
  • 2 cups cornflakes

Instructions

  • Preheat the oven to 350 degrees. Generously spray a 9X11 baking dish.
  • Melt 3 Tablespoons of butter in a large pot. (I use a dutch oven.)  Add the chopped onion and fry until it is softened.
  • Whisk in the flour, salt, and pepper. Cook this for at least 3 minutes or until it is bubbly.
  • Add the milk and cream. Stirring constantly, cook this until it boils and thickens. Stir in the cheese and cook until melted. Stir in the carrots and parsley.
  • Spread this mixture into the prepared baking dish.
  • In a medium bowl, melt 2 Tablespoons of butter and stir in the cornflakes until coated. Sprinkle the cornflake mixture evenly over the top of the carrots.
  • Bake for 20 minutes.

Notes

You can really put this casserole into whatever kind of baking dish you would like. If you were to put it into a small round or oval casserole dish, you may want to increase the bake time to 30 minutes.  As long as it is heated through.
