Amish Breakfast Casserole

Made with eggs, sausage, hash browns, and lots of cheese, Amish Breakfast Casserole is an easy, filling, and super cheesy way to start the day. With just 15 minutes of prep, it’s great for holiday mornings and weekdays alike.

Ingredients

  • 1 pound breakfast sausage ground
  • 1 medium yellow onion diced
  • 9 large eggs lightly beaten
  • 4 cups frozen shredded hash browns thawed
  • 2 cups shredded cheddar cheese
  • 1 1/2 cups small curd cottage cheese
  • 1 cup shredded Swiss cheese

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish and set aside.
  • Heat a large skillet over medium-high heat. Add the ground sausage and diced onion. Cook until the sausage is browned and cooked through, and the onions are softened, about 8-10 minutes.
  • Drain any excess grease from the skillet, then transfer the sausage and onion mixture to a large mixing bowl.
  • Add the beaten eggs, thawed hash browns, shredded cheddar cheese, cottage cheese, and shredded Swiss cheese to the bowl. Stir everything together until well combined.
  • Pour the mixture into the prepared baking dish and spread it out evenly.
  • Bake in the preheated oven for 45-50 minutes, or until the eggs are set and the cheese is melted and bubbly.
  • Remove the casserole from the oven and let it cool for 5-10 minutes before slicing.
  • Serve warm, garnished with sliced chives if desired. Enjoy!
