Peel and shred the apple using a cheese grater. Place Apple shreds into a paper towel and allow the apple to dry out while you make the dough.
Preheat oven to 350 degrees and line two baking sheets with parchment paper.
Using a medium bowl, whisk together the flour, cream of tartar, baking soda, cinnamon, and salt.
Using a large bowl, beat together the butter, sugar, eggs and vanilla until creamy.
Gradually mix in the dry ingredients.
Fold in the shredded apples.
In a small bowl, mix together the sugar and cinnamon.
Using a ice cream scooper, scoop some dough into your hands and roll into a ball.
Roll the dough ball into the cinnamon sugar mixture.
Place onto cookie sheet.
Repeat steps with remaining dough.
Bake in the oven for 11-13 minutes.
Allow to cool before enjoying!
