Chicken Enchilada Casserole

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with cooking spray or a little olive oil.
  • Heat the olive oil in a medium saucepan over medium heat, add the diced yellow onion, and cook for 4 to 5 minutes until soft and translucent.
  • Stir in the minced garlic, flour, chili powder, and ground cumin, cooking for about 1 minute while stirring constantly.
  • Slowly pour in the chicken stock and tomato sauce while whisking vigorously to break up any flour lumps, then add 1/2 teaspoon of salt. Bring the mixture to a simmer, reduce the heat to low, and let it cook uncovered for 8 to 10 minutes until it thickens into a smooth sauce.
  • While the sauce simmers, stir together the shredded chicken, black beans, drained green chilies, the remaining 1/2 teaspoon of salt, and the black pepper in a large mixing bowl until combined.
  • Ladle about 1/2 cup of the warm enchilada sauce into the bottom of the prepared baking dish and spread it evenly, then arrange 4 flour tortillas across the bottom, tearing them if necessary to cover the surface.
  • Spread half of the chicken and bean mixture over the tortillas, pour 1 cup of sauce over the top, and sprinkle with 1 cup of the shredded colby jack cheese. Repeat the layers once more, starting with 4 tortillas, the remaining chicken mixture, another cup of sauce, and another cup of cheese.
  • Top with the final 4 tortillas, pour the remaining enchilada sauce evenly over the top to cover the tortillas entirely, and sprinkle with the final cup of colby jack cheese.
  • Bake uncovered at 375°F (190°C) for 25 to 30 minutes until the casserole is hot, bubbly around the edges, and the cheese is fully melted and lightly golden. Enjoy!
