These Green Beans Almondine are a quick and easy side dish made with tender crisp green beans, buttery shallots, and toasted almonds. Finished with fresh lemon and garlic, they’re light, flavorful, and perfect for any weeknight or holiday meal.
Bring a pot of water with salt to a boil. Add the green beans and boil for 3-4 minutes, or until tender crisp. Strain the water and rinse in really cold water. Drain really well. The less water remaining on the green beans the better.
Add the butter to a heavy bottomed or cast-iron skillet and heat over medium heat. Add the shallots and sauté until softened, about 4-5 minutes.
Increase the heat slightly and add the green beans, almonds, salt, and pepper and toss with tongs for about 2 minutes or until the green beans are blistered.
Add the garlic and lemon juice and toss for an additional minute or until the garlic is fragrant and browned. Remove from the heat and serve warm.

Store leftover green bean almondine in the fridge for 3-4 days.
