Ingredients

  • 3 Georgia Peaches pitted, peeled and diced
  • 1/2 red bell pepper seeded and diced
  • 1/8 cup red onion diced
  • 1/4 cup fresh cilantro chopped
  • 1 lime zested and juiced
  • 1/2 teaspoon garlic. minced or chopped
  • 1/2 jalapeno pepper seeded, pith removed and minced
  • 1/8 teaspoon salt

Instructions

  • Prepare the ingredients above and add to a large bowl.
  • Toss to combine and add additional salt or lime juice to your preference.

Notes

  • This is a very fresh and delicious recipe, but only if the peaches are ripe and in season.
  • You can omit the onion completely if desired.
  • Fresh cilantro is best but dried would work as well. Use 2 Tablespoons instead of ¼ cup.
  • If you want to add more heat to the salsa, include all or some of the jalapeno seeds, as that is where the heat is!
  • Excellent as a dip with chips or also is wonderful served over grilled chicken.
