Peanut Butter Pretzel Bites

These Peanut Butter Pretzel Bites feature pretzel sandwiches filled with a creamy, sweet peanut butter mixture and dipped in chocolate. A quick, easy no-bake treat.

  • Prepare a large baking sheet by lining it with parchment paper. Set aside.
  • Add the peanut butter, softened butter, sugar and salt to a mixing bowl. Beat on medium speed until the sugar is dissolved and the mixture is smooth and creamy.
  • Add the powdered sugar gradually, while mixing on low, until it is fully combined.
  • Lay 30 pretzels on the baking sheet.
  • Scoop out enough dough to make a small ball around 1” in diameter. Place the balls in the middle of each pretzel. (It’s helpful to dust each ball in a bit of powdered sugar to help it not stick to your hands when rolling.)
  • Place a second pretzel on top and gently press the two pretzels together creating a sandwich about 1” thick. Place the sandwich back on the baking sheet.
  • Place the baking sheet in the refrigerator or freezer for 20-30 minutes to firm up.
  • After the sandwiches have time to set, add the chocolate chips to a small, microwave-safe bowl.
  • Microwave on high in 15 second increments, while stirring after each interval, until the chocolate is melted and smooth. Do NOT overheat.
  • Remove the sandwiches from the refrigerator and dip each sandwich halfway into the chocolate. Allow the excess chocolate to drip off, then place the sandwich back on the baking sheet. Repeat the process with the remaining sandwiches.
  • Add sprinkles if desired, then place the baking sheet back into the refrigerator for another 15 minutes or so, until the chocolate is set.
  • Serve immediately or chill until ready to serve.

Notes

Store peanut butter pretzel bites in an airtight container in the refrigerator for up to 2 weeks.
