Instructions
Preheat the oven to 350 degrees and place parchment paper onto cookie sheets.
Using a large bowl, whisk together the flour, ginger, baking soda, cinnamon, and salt.
Using a standing mixer, beat together the butter and sugar until creamy.
Beat in the egg and molasses.
Gradually mix in the flour until combined .
Place into the fridge for an hour.
Mix the 1/3 cup sugar and 1 Tablespoon of cinnamon into a small bowl.
Using a medium cookie scooper, scoop out some dough and roll it into a ball.
Roll the dough into the cinnamon sugar mixture and place onto the cookie sheets 2 inches apart.
Bake in the oven for 10 minutes (until lightly browned around the edges.
