Rocky Road Candy
This Rocky Road Candy is such a great no-bake candy that everyone loves! A rich base made of chocolate chips, butterscotch chips, and peanut butter gets studded with almonds and mini marshmallows. This has a fudge-like texture with chewy marshmallows and crunch almonds.

- 1 cup butterscotch chips
- 12 ounce package semi sweet chocolate chips
- ⅓ cup peanut butter
- 1 cup salted roasted almonds, coarsely chopped
- 10 ounce package mini marshmallows
Line an 8x8 or 9x9 inch pan with parchment paper and set aside.
In a large microwave safe bowl combine the chocolate chips, butterscotch chips and peanut butter. Melt in the microwave in 30 second increments until all melted and smooth. Set aside for 5-10 minutes until slightly cool.
Stir in the almonds and marshmallows and stir until all combined.
Pour into the prepared pan and top with extra mini marshmallows if you prefer. Place in the fridge to cool for 1 hour.
Slice into 16 pieces and serve!
- Store leftovers in an airtight container in the fridge for up to a week.
- You can use peanuts or cashews if you like.
- Add sprinkles for a pop of color.
