Sausage and Rice

This One Pot Cheesy Sausage Rice is a quick, delicious, cheesy dinner you can whip up in one pan and the whole family will love. Smoked sausage, onion, rice, cream of chicken soup, rotel tomatoes, garlic and cheese come together to create a hearty family friendly dinner.

Instructions

  • In a large skillet over medium high heat add your sausage and onion and cook until sausage is browned and onion is tender.
  • To the pan add your cream of chicken soup and fill the can up with water twice and add it to the pan.
  • Add your tomatoes, garlic, red pepper flakes and rice.
  • Bring up to a boil. Cover and reduce heat to low.
  • Cook for 20-25 minutes until the rice is tender.
  • Stir in 1 cup of the cheese.
  • Top with the remaining cheese and cover until the cheese is melted.
  • Garnish with parsley if desired. Serve!

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • You can use any kind of sausage you like; turkey or andouille would be wonderful in this.
  • You can also add bell peppers or broccoli to the dish.
  • Switch out the cream of chicken for cream of mushroom.
  • You can spice it up by switching the cheese to pepper jack.
