Ingredients

  • 1 20-ounce bag fresh refrigerated cheese tortellini See details on how to prepare
  • 1 cup basil pesto homemade or store bought
  • 1 ½ cups grape or cherry tomatoes sliced in half

  • ¼ cup red onion diced
  • ¼ cup fresh basil julienned

Instructions

  • Add the cooled tortellini to a large bowl.
  • Add the sliced tomatoes, mozzarella balls, onion and pesto.
  • Stir well to thoroughly combine.
  • Garnish with fresh basil.
  • Serve immediately or refrigerate, covered for up to 2-3 days.

Notes

If you can’t find marinated ones, you can use the ones that are in plain water. Just make sure to drain well first
