- 2 cups mashed potatoes
- 3 large eggs beaten
- 1 cup cheddar cheese shredded
- 6 slices bacon cooked and crumbled
- 1/4 cup chives chopped
- Salt & Pepper to taste
- 1/4 cup shredded Cheese (such as Parmesan or Gruyère)
Combine mashed potatoes, eggs, cheese, crumbled bacon and chives.
Season with salt and pepper if needed.
Grease a muffin pan and add a heaping spoonful into each cup.
Sprinkle each cup with Parmesan cheese.
Bake for 30-35 minutes at 400°F or until the tops are golden brown.
Serve warm with sour cream.
