Graham Cracker Crust
- 1 ½ Cup graham cracker crumbs
- ¼ Cup sugar
- 6 tbsp unsalted butter melted
- Baking spray
Funfetti cheesecake Ingredients
- 24 ounces cream cheese softened at room temperature
- 2 cup vanilla cake mix powder form
- 1 cup granulated sugar
- 16 ounces Cool Whip thawed
- 1 cup rainbow colored sprinkles
Crust Directions
Preheat oven to 350 degrees
Spray springform pan with pam baking spray and line the bottom with parchment paper Combine the ingredients into a medium bowl
Spray the pie pan with the baking spray
Press half the graham cracker crust into the springform pan
Press the remaining crust up along the sides
Bake in the oven for 10 minutes and allow to cool completely

In a large bowl beat the cream cheese with the hand mixer until it is light and fluffy
Add the dry cake mix and the granulated sugar and mix on medium speed until these are well combined
Using a spatula, fold in the 8 ounces of thawed Cool Whip whipped topping
Add in 1/4 cup of the sprinkles and stir to combine.
Refrigerate for 3-4 hours.
Before serving, sprinkle the top with more sprinkles and Cool Whip.
