What You’ll Need
Graham Cracker Crust: You will need graham crackers crumbs, sugar and melted unsalted butter. You can make your own crumbs or buy them pre-bought.
Cheesecake: The no bake cheesecake batter is made from softened cream cheese, vanilla cake mix, sugar, Cool Whip, and rainbow sprinkles.
How to Make Funfetti Cheesecake
- Make the crust: Combine the crumbs with the sugar and the melted butter. Spread in the 9-inch springform pan and bake for 10 minutes. Let cool completely.
- Make the Cheesecake: In a large mixing bowl, beat the cream cheese until it is fluffy. Add the dry cake mix and sugar. Once it is combined, fold in the Cool Whip and the sprinkles. Spread over the crust. Let chill in the refrigerator for 4 hours before serving. Add more sprinkles before serving as well as more whipped topping or Homemade Whipped Cream.
Tips, Tricks and Variations to Funfetti Cheesecake
Quick and Easy Crust: For a fuss-free crust, I used crushed graham crackers mixed with melted butter. Some other ideas are
- Oreo Cookie Crust: Replace the graham crackers with crushed Oreo cookies (with or without the cream filling) for a rich and chocolatey crust. Mix the crushed cookies with melted butter, press into the pan, and refrigerate.
- Shortbread Crust: Crushed shortbread cookies can be a delicious and buttery alternative. Combine the crumbs with melted butter, press into the pan, and chill until firm.
- Pretzel Crust: For a salty-sweet twist, try using crushed pretzels mixed with melted butter. The combination of the crunchy pretzels and the creamy cheesecake filling creates a delightful contrast.
- Cookie Crust Variation: Explore other cookie options such as gingersnaps, chocolate chip cookies, or even almond biscuits. Simply crush the cookies, combine with melted butter, and press into the pan.
- Nuts and Graham Cracker Combo: Add some texture and nuttiness by incorporating crushed nuts, such as pecans or almonds, into your graham cracker crust mixture. The combination of nuts and graham crackers can add a delightful crunch to your cheesecake.
Sprinkle Galore: Experiment with different types of sprinkles to add variety and visual appeal. Try using rainbow jimmies, nonpareils, or even shaped sprinkles to customize your cheesecake.
Extract Extravaganza: Add a splash of flavor to your cheesecake by incorporating extracts. Vanilla extract is a classic choice, but you can also try almond extract or lemon extract for a subtle twist.
Toppings and Garnishes: Elevate your Funfetti Cheesecake by adding toppings and garnishes. Fresh berries, like strawberries, blueberries or raspberries, whipped cream, chocolate shavings or chocolate chips, or additional sprinkles (also called jimmies or nonpareils) are all excellent choices to enhance both the flavor and presentation.
Make Mini Cheesecakes: It is easy to turn this into Mini Funfetti Cheesecakes. Use this recipe and make it in cupcake liners.
