Preheat oven to 350°F
Grease an 8x8” metal baking pan or line it with parchment paper 3. In a large mixing bowl, add the melted butter, brown sugar and granulated sugar and whisk until it’s a smooth paste (approx. 2 - 3 mins)
Add the 2 eggs and the yolk at room temperature and whisk until smooth 5. Gently whisk in the vanilla, coarse salt, flour and, if using, the optional instant coffee. Do not over combine! Whisk until the dry ingredients are just integrated well.
Add the chopped pieces of chocolate bars.
Add the mixture to the baking pan.
Bake at a 350F for 25 - 30 mins.
Let cool down completely before cutting.
