We’ve all had chocolate brownies before, but you might not have tried Blondies, a sweet, vanilla-flavored version of a chewy, decadent dessert nearly everyone loves. This is, by far, the best recipe for Blondies that I’ve ever tried. I think what I like most about these sweet treats, besides their delicious flavor, is just how simple it is to make them. These are similar to chocolate chip cookie bars, but with a fluffier and chewier texture like a traditional brownie.

So, if you’re looking for something easy and stress-free that you can prepare for ANY reason, whether you want a quick dessert or need something to bake and bring with you to a special event, this recipe is the one for you! You may also really love these Vanilla Brownies. 

What Are Blondies?

Traditional brownies consist of a key ingredient – cocoa powder. The cocoa powder gives them that truly chocolatey touch, which many people love. But for those who prefer vanilla or simply want to try something different from the typical brownie, Blondies are an alternative. They’re made without cocoa powder and consist of a blend of several ingredients, such as vanilla extract with brown sugar and all-purpose flour.

Easy Blondie Recipe Ingredients

If you’re ready to try this simple yet delicious Blondies recipe, be sure to get the following ingredients!

  • Unsalted Butter – Melt 1/2 cup of unsalted butter to combine with your other ingredients.
  • Brown Sugar – Use one cup of brown sugar to give these blondies a naturally sweet flavor.
  • Granulated Sugar – Combine your brown sugar with 2/3 cups of white granulated sugar.
  • Eggs and Yolk – Use two eggs, one yolk, both of which should be left out to reach room temperature before you start mixing.
  • Vanilla Extract – Add two tablespoons of vanilla extract to your blondie mixture. The vanilla adds more flavor to enhance the taste of the Blondies.
  • Salt – Just a teaspoon of salt will be all you need for these Blondies.
  • Famous Chocolate Bars – Chop your caramel chocolate bars into chunks to mix with your batter.
  • All-Purpose Flour – Complete your batter with 1 1/2 cups of all-purpose flour.

You can also add a dash of instant coffee to your batter, but it’s completely optional and not a necessity.

How to make Blondie Brownies

  1.  Preheat oven to 350°F 
  2. Grease an 8×8” metal baking pan or line it with parchment paper  3. In a large mixing bowl, add the melted butter, brown sugar and granulated sugar  and whisk until it’s a smooth paste (approx. 2 – 3 mins)  
  3. Add the 2 eggs and the yolk at room temperature and whisk until smooth 
  4. Gently whisk in the vanilla, coarse salt, flour and, if using, the optional instant  coffee. Do not over combine! Whisk until the dry ingredients are just integrated  well. 
  5. Add the chopped pieces of chocolate bars 
  6. Add the mixture to the baking pan  
  7. Bake at a 350F for 25 – 30 mins  
  8. Let cool down completely before cutting

Check out these quick notes for recipe success! This recipe is practically foolproof, so you should have no problem preparing such a sweet and tasty treat.

  • Don’t over-bake your Blondies because that will change their texture and make them hard as a rock. You should start checking on them at the 25-minute mark. The mixture should be gooey, not runny.
  • It’s normal for the Blondies to be slightly jiggly when you remove them from the oven. Don’t assume they’re not done. They should be jiggly but not excessively shaky to the point that they’re practically runny.
  • The best way to store the Blondies is to keep them uncut, place foil over the baking pan, and stick them in the fridge, where they will stay fresh for up to five days.

Storing Blondies:

• Best if stored un-cut in baking pan topped with tin foil and may stay fresh up to 5 days in refrigerator.
• If cut, it’s best to store them in an air-tight container with wax paper as a liner; may stay fresh up to 3 days at room temperature.

Tips & Substitutions

  • You can use either light brown sugar or dark brown sugar. Either one will work in this recipe. If you decide to use dark brown sugar, the Blondies will be slightly sweeter, so that is something to keep in mind when preparing this recipe.
  • Always melt your butter before you combine it with your other ingredients. The melted butter helps produce the incredible flavor and chewy texture you will love when biting into the Blondies.
  • Avoid over-baking, check them at the 25 min mark; mixture should be gooey but not runny • The brownies are done with the top looks shiny and creased. When you take out the pan, the mixture should be jiggly, not too shaky.
  • When sticking a toothpick inside, you shouldn’t have a clean toothpick coming out, it should still have some of the mixture on it
  • If you want to add a slight crunch to these Blondies, chop up some macadamia nuts and toss them into the batter. The nuts will go great with the rest of the ingredients, including the chocolate chunks added to the batter. If you don’t have macadamia nuts, you can use walnuts, which are also a great addition to the Blondies.
  • If you don’t want to use caramel chocolate bars, feel free to use milk chocolate or dark chocolate, whichever you personally prefer. Another option is using chocolate chip, peanut butter chips, white chocolate chips, butterscotch chips, etc… Use what you like to ensure these Blondies meet your expectations.

Should I use a metal pan?

If you choose to use a metal pan, then you will have to drop the temperature a little bit! Metal and glass cook at different temperatures! 

Why are my blondies hard?

One thing to consider is that your blondies may turn out hard if you add too much flour. Make sure you are using the right amount of flour so the brownies don’t wind up too hard. So, make sure you’re not incorrectly measuring the ingredients!
