Pecan Ball Cookies



  • 2 1/4 cups Pecans finely chopped/ground
  • 2 sticks unsalted butter room temp
  • 1/2 cup powdered sugar
  • 1/3 cup granulated sugar
  • 1/2 tsp salt
  • 2 1/2 tsp pure vanilla extract
  • 2 1/4 cups all-purpose flour


  • 1 cup powdered confectioners' sugar to dust
  • Instructions
  • 1/2 cup crushed pecan



  1. Place pecans in a food processor or small chopper.
  2. Ground until almost ground.
  3. In a standing mixer bowl beat butter, 1/2 cup powdered sugar, and 1/3 cup granulated sugar until light and fluffy.
  4. Mix for 5 minutes.
  5. Add in salt, and vanilla extract and beat until combined.
  6. Slowly add in the flour, 1/2 cup at a time.
  7. Beat until combined.
  8. Add the remaining dry mixture until fully incorporated.
  9. Add in the crushed pecans and mix until incorporated.
  10. Cover the bowl with a parchment paper loosely.
  11. Refrigerate dough for 1 hour.
  12. Preheat oven to 350 degrees F.
  13. Line a large baking sheet with parchment paper.
  14. Use a cookie scoop to scoop dough.
  15. Roll the dough into a ball.
  16. Place on baking sheet spaced about 1-2 inches apart.
  17. Bake for 15-18 minutes.
  18. Allow cookies to cool for 5 minutes.
  19. In a large bowl, add powdered confectioners' sugar, and crushed pecans, stir to combine.
  20. Place the cookie in the powder sugar bowl and coat evenly.
  21. Repeat until all cookies are coated.
