Dr Seuss Green Egg Meringue Cookies

Kids love these Dr Seuss Green Egg Meringue Cookies. They taste delicious but they really do look like eggs! This would be so fun for a Dr. Suess party or a school lesson.

  • Preheat oven to 225 degrees
  • In a standing mixer, combine the egg whites and cream of tartar
  • Mix until soft peaks start to form
  • Continue to mix while alternating between the two sugars, add 1 TBSP at a time, ending with powder sugar
  • Continue to mix until stiff peaks form
  • Scoop 1/2 cup of the meringue into a bowl and add a few drops of green food coloring and mix until combined
  • Scoop into one piping bag
  • Scoop the rest of the meringue into the second piping bag.
  • Cut the tip off the piping bag and pipe out an egg shape onto the cookie sheet.
  • Depending on how big you pipe the eggs, you can about 6-12 onto a cookie sheet
  • Cut the tip off the green piping bag and pipe a small dot onto the white meringue.
  • Bake in the oven for 1 hour minutes
  • Let cool for a few minutes before enjoying!
