Baked Peaches
Peach halves are sprinkled with cinnamon and brown sugar and a splash of bourbon then baked until warm and tender in this

peaches
ripe but firm, halved and pitted

unsalted butter
cut into small cubes

brown sugar
light or dark

teaspoon
cinnamon

teaspoon
vanilla extract

lemon juice
Pinch
of salt

Tablespoon
maple syrup
Splash of bourbon
Instructions
Preheat oven to 375°F. Lightly butter a small baking dish just large enough to hold the peaches snugly.
Place peach halves cut-side up in the baking dish.
In a small bowl, mix brown sugar, cinnamon, and salt. Sprinkle evenly over the peaches.
Dot each peach half with butter, then drizzle with vanilla, lemon juice and bourbon.
Divide the brown sugar mixture on top of the peaches.
Bake them for 25 to 30 minutes, or until the peaches are fork-tender and the tops are lightly caramelized.
Serve warm with a big scoop of vanilla ice cream.
Notes
Store leftover baked peaches in the fridge for 2-3 days.
