Chocolate Chip Cookie Brownie Bars
These are a scrumptious layered dessert bar that features a homemade chocolate chip cookie on the bottom, topped with a brownie layer. Finish off the dessert with a mouth-watering cookie dough frosting on top.

Directions
Preheat oven to 350 degrees and line parchment paper into the 9x13 baking dish.
Using a standing mixer, beat the butter, sugar and brown sugar together until light and fluffy.
Beat in eggs, one at a time until combined.
Mix in the vanilla, baking soda, salt until combined.
Gradually mix in the flour ingredients until combined.
Fold in chocolate chips.
Spread the dough into the pan.
Bake the dough into the oven for 25 minutes or until the edges are lightly golden brown and the center is almost set.
Allow to cool while you make the brownie batter
Brownie Batter directions:
Using a medium pot on low-medium heat, melt the butter.
Whisk in the chocolate chips until they are smooth.
Remove pot from heat and set aside.
Using a medium bowl, whisk together the eggs, sugar, salt and vanilla extract.
Gradually whisk the egg mixture into the chocolate mixture.
Gradually whisk in the cocoa powder and flour until combined and smooth.
Spread the brownie batter onto the top layer of the cookie layer.
Bake in the oven for 25-30 minutes or until a toothpick comes out clean in the middle.
Place on the counter to cool completely.
Chocolate chip cookie dough frosting directions:
Using a standing mixer, beat together the butter, sugar and brown sugar until combined and smooth.
Mix in the milk, vanilla and salt until combined.
Add the flour in until combined.
Fold in the chocolate chips.
Spread the frosting onto the top of the brownie layer.
Place into the fridge overnight to allow the frosting to harden.
Cut into bars and enjoy!
How To Heat Treat Flour For Cookie Dough Layer:
- Preheat oven to 350F degrees. Line a cookie sheet with parchment paper and spread flour in an even layer.
- Bake for 5-7 minutes, use a thermometer to check that the flour reached 160F (72C) immediately after removing from oven.
- Once flour has reached 160F (72C) allow it to cool and run it through a sifter to break up any clumps that may have formed while baking.
PRO-TIP: I highly recommend heat treating your flour before mixing it into the recipe. You can do this by microwaving the flour for 1 minute and 15 seconds (stopping and mixing it after 15-second intervals). This is good for heating the flour to prevent any bacteria.
