- 17.5 ounce package store-bought sugar cookie mix I used Pillsbury
- 1 stick unsalted butter softened (1/2 cup)
- 1 large egg
- 12 Tablespoons Jello powder 3 tablespoons each of cherry, lime, berry blue, and lemon
- 1/2 cup granulated sugar for rolling
Preheat the oven to 375°F (190°C). Line baking sheets with parchment paper or silicone baking mats and set aside.
Mix the sugar cookie mix, softened butter, and egg in a large bowl until a smooth dough forms.
Divide the dough evenly into four portions and place each portion in a separate bowl.
Add 3 tablespoons of Jello powder to each portion (one flavor per bowl) and knead the dough until the powder is fully mixed in and the color is evenly distributed.
Scoop about 1 tablespoon of dough, roll it into a ball, and then coat it thoroughly in granulated sugar. Repeat with the remaining dough, spacing the sugar-coated cookies 2 inches apart on the prepared baking sheets.
Flatten each ball slightly with your fingers or the bottom of a glass. Once flattened, refrigerate the baking sheets with the dough for at least 30 minutes to help the cookies hold their shape during baking.
Bake the chilled cookie dough in the preheated oven for 8-10 minutes, or until the edges are set but the centers still appear soft.
Transfer the cookies to a wire rack to cool completely before serving. Enjoy!
