  • In the bottom of your slow cooker add your onion and jalapenos.
  • Season the chicken both sides with the jerk seasoning.
  • In a large skillet over medium high heat place the thighs skin side down and cook for 3-5 minutes until just browned.
  • Place the chicken skin side up in the slow cooker.
  • In a small bowl mix together the garlic, brown sugar, pineapple juice, soy sauce and ketchup.
  • Sprinkle with the scallions.
  • Cover and cook on low for 6 hours or high for 4 hours.
  • Serve over rice!

Notes

Store leftover jerk chicken in an airtight container in the fridge for up to 3 days.
