Slow Cooker Cowboy Stew

Making this for dinner is so simple and hassle-free. All you need to do is prepare your ingredients and let your slow cooker work its magic and cook for you. You can go about your day while this amazing meal cooks and by the time your busy day is over, it will be waiting for you and your family to devour!

Key Ingredients You’ll Need

Meat: You will need ground beef and smoked sausage for this recipe, you can use other things like ground turkey or ground chicken, turkey or pork sausage, etc

Seasonings: I like to flavor this recipe with garlic cloves, ground cumin, chili powder, and maybe some salt and pepper for added flavor.

Vegetables: I like to add in onion, baby potatoes, pinto beans, corn, tomatoes with green chilis, and mixed vegetables.

Chicken Stock: This will be the soup/stew liquid and hold all of the flavors that are infused from the seasonings and veggies.

How To Make Cowboy Stew

Step 1. Cook and brown the ground beef in a medium skillet and drain the excess juices. Put the prepared ground beef, smoked sausage, garlic, onion, potatoes, beans, corn, tomatoes, frozen veggies, chicken stock, and seasonings into your slow cooker.

Adding the ingredients into the slow cooker.

Step 2. Place the lid on top of the cooker. Allow the ingredients to cook for 6 hours on low or for 4 hours on high. The potatoes will be tender when it’s done. Serve and enjoy!

Can I Make This Cowboy Stew On Stove Top?

Yes! To make this stew on the stovetop, all you need to do is place a large iron skillet over medium-high heat. Slowly add in your prepared ingredients. Cook until it beings to bubble a little bit. Allow the ingredients to cook for about 15 minutes while stirring occasionally.

Can You Freeze This?

Yes! This cowboy stew recipe is perfect for meal prep and handy to have a ready-made hearty meal in the freezer. Keep in mind that potatoes can be get a different texture in freezing temps, so you may want to leave those out when freezing — you can always add cooked potatoes to this when it’s time to serve!

Tips & Tricks

  • This recipe is very hearty by itself but tastes amazing over rice or noodles.
  • You can add in extra ground beef and leave out the sausage or vice versa if desired.
  • Use any kind of canned beans that you like and add more varieties if you want as well.
  • I like to serve this recipe with crackers or bread on the side.

I used Ro-Tel brand canned chilis with tomatoes for this recipe and I ALWAYS sauté the onions before adding to the stew. It cuts down on heartburn. I sometimes add red and yellow sweet bell pepper and I also sauté them too, inw ith the ground beef before draining the fat. It helps to render the onions and peppers to a more digestible form. Raw onions have fermentable sugars that can upset some tummies. When you cook them until translucent a chemical change occurs that helps people digest them more easily.
