Cabbage Roll Soup recipe is a delicious dinner recipe that will warm your belly on a cold and crisp fall day. This unstuffed cabbage soup is one of the BEST soup recipes that we have ever made and very easy to make!

With lots of chopped vegetables, broth, tomato sauce, ground beef and rice, this hearty soup is a total winner. We like to serve this soup with our easy and delicious 30-minute dinner rolls.

Cabbage Roll Soup

This recipe is pretty simple, which is just one of the reasons I love it so much. You simply season and brown your ground beef, add veggies, broth and tomato sauce, then let sit for 25 minutes. My whole family loves this soup!

We really like making this recipe in our amazing dutch oven, but you can totally use your soup pot instead. Any pot with a lid will work!

How to make Cabbage Roll Soup?

Ingredients you will need:

  • lean ground beef
  • vegetable oil
  • onion
  • garlic
  • green cabbage
  • carrots
  • low-sodium beef broth
  • tomato sauce
  • white rice
  • bay leaf
  • brown sugar
  • parsley

To make this delicious unstuffed cabbage soup, you’ll need to start with lean ground beef. You can use regular ground beef, but we like that the lean keeps out a lot of the grease. You put a nice golden brown on the beef and then add in the rest of the ingredients to the pot.

I like to make a double batch of this soup so we have leftovers to eat. We always have sporting events and this is such an easy dinner to heat up on those busy nights knowing everyone will love it.

Can you Freeze Cabbage Roll Soup?

Yes!! If you have leftovers, this soup freezes perfectly.  We place the cooked and cooled soup into individual portion freezer bags and place them on a tray or cookie sheet to freeze.  Once the soup is frozen, stack the bags in the freezer. Take a bag out to thaw when ready for use. These make easy and delicious lunches.

What Is A Dutch Oven?

A Dutch Oven is very similar to your usual large pot, except with one big difference. That is, it’s usually made out of cast iron. Also, it is much heavier and thicker and the lid fits very tightly on top. Here is the classic red one we like to use.

To cut and dice your vegetables, I always suggest getting a Ninja Food Chopper Express Chop. (Just $18.99 on Amazon.) This things makes chopping one hundred times easier! It’s such a time saver.

Cabbage Roll Soup

Cabbage Roll Soup recipe is a delicious dinner recipe that will warm your belly on a cold and crisp fall day. This is the ultimate comfort food!

  • 2 tsp. vegetable oil
  • 1 lb. lean ground beef
  • salt and pepper
  • 1 medium yellow onion diced finely
  • 2 cloves garlic minced
  • 4 cups chopped green cabbage
  • 2 medium carrots quartered and sliced
  • 4 cups low-sodium beef broth
  • 3 8 oz. cans tomato sauce
  • 1/2 cup white rice uncooked
  • 1 bay leaf
  • 3 tbsp. light brown sugar
  • 2 tbsp. fresh chopped parsley


  • In a dutch oven or large soup pot, heat oil over medium-high heat and add ground beef.
  • Season ground beef with salt and pepper as desired and cook until browned.
  • Add diced onion and minced garlic and cook for another 2-3 minutes, until onions are tender.
  • Add in chopped cabbage, carrots, tomato sauce, beef broth, white rice, bay leaf, and brown sugar and stir to combine.
  • Bring soup to a simmer and let cook for about 25 minutes, until rice is tender.
  • Take out the bay leaf and sprinkle with chopped parsley.

    OMG, this soup is amazing! He doesn’t like to try new things, but even he loved this soup. It’s definitely on the rotation. The only thing I’ll do differently is let the soup boil a few minutes before I add the rice. We like the cabbage softer than what it was but if we cooked longer, the rice would be much.     I made this with sauerkraut instead of fresh cabbage and used spaghetti sauce instead of tomato sauce because that’s what I had on hand. Otherwise followed the recipe and it turned out really good.

    Just made this recipe for dinner this week. It was amazing! Taste just like the cabbage rolls that my mom made. This is so much easier, and less time intensive. I agree with earlier posts that recommend adding more cabbage. Hey, you’ve got an entire head of cabbage in front of you, you might as well use it! I doubled the amount of cabbage, and it made a really good hardy soup. I would recommend adding the brown sugar one tablespoon at a time. (2 tablespoons were just about right for our family’s sweetness preference). Finally, I used what tomato products I had in my pantry, so I added one 14 oz. can diced tomatoes, and( 1 ) 6 ounce can of tomato paste mixed with 2 cups of water. It worked! Thanks for sharing.

    1. Hi Emily. I understand busy family schedules! This recipe really has little prep and cook time and I’ve never tried it in a slow cooker but I would cook on high for 4 hours, or on low for 7-8 hours.

    Modified quite a bit; shows that this is a great and forgiving recipe. I had premade meatballs that needed a “cause”; also used whole large cabbage so I added a can of tomatoes, several tablespoons tomato paste , and some leftover pasta sauce, also a splash of lemon juice. Still perfection and delicious.

    Making this tonight, so yummy for some extra texture I added some radishes. I also needed to use a jar of pizza sauce up so I used that instead.     1. I did make some modification: I added orzo, celery, extra cabbage with 93% turkey meat. This was a hit with my family of 4 with 2 picky toddlers. For the toddlers, I also added a little fresh jasmine rice mix with this soup for them as well.

    Delicious!! I knew this recipe was going to be winner and it was. I love a little sauerkraut with a dish like this so I did add a small can.     I have this in the crock pot right now. I added two stacks of celery and a red bell pepper that I needed to use up. Also a can of roasted diced tomatoes.
    I’m going to make the rice separately so I can freeze some soup without rice.

    I’ve made this several times, it is delish!!
    I use lemon oil and brown rice. I add the rice to each serving. (I cook the rice separately from the soup, less starchy.)
    I increase the amount of ingredients to accommodate an 8 qt.crockpot.
    This recipe is an added favorite!! Warms the belly and pleases the palate!! ❤️

    We really enjoyed this! I didn’t expect my cabbage averse family to like it, but I think the way the cabbage almost melted into the soup helped a well as the touch of sweetness. I added a little more rice than your recipe, which made it a bit less brothy, but everyone loved the thicker consistency, more like a stew.

    Was very good but a bit sweet from the brown sugar. Will omit next time I make this. And yes there will be a next time. Also used an entire medium head of cabbage and I never add the rice or would I add noodles to any soup. Always cook them separately. The starches soak up all the broth.

    I would have to change one thing, my Hubby is not a tomato lover so I would go with better than bouillon vegetarian.Since I am a vegetarian ,I take my part of the soup before I put in the beef.

    This was delicious! My wife and teenagers said I have to add this soup to the Soup Rotation this winter!

    I made it exactly to the written recipe and it came out perfectly. The cabbage closer to the cent of the head maybe needed a little more time to simmer, but I liked the contrast of the soft cabbage to those pieces with a little more bite.

    I’m sure as written this is amazing. I have been trying to recreate our favorite restaurants cabbage rolls that we love, but in soup from. I used your soup recipe as a base, and only added 2 stalks of celery and 3 T of cranberry sauce (they use lingonberry but all I had was cranberry). It was SO GOOD!     So delicious! I’ve made this several times and it’s so fast and easy. Last night I didn’t have 3 cans of tom sauce, so I used a can of tomato paste mixed with 1/4C hot water, then left out the brown sugar…I think I like this way a little better!

    I am making this again this week. I improvised with mild italian sausage (yes, added fat but the flavors were out of this world lol). I made sure I fried and drained the sausage well. Unbelievable flavor from the sausage meat. I did add a little bit of hot pepper flakes too.

    This soup is awesome! I used picante tomato sauce by accident the first time I made it and it turned out even better than the second time when i used half picante and half regular. The spiciness balanced out the sweet from the brown sugar nicely, especially the next day because it was sweeter left over. We love veggies so I also put 2 cups extra cabbage and doubled the carrots. Definitely a new staple recipe at our house.

    I love this soup! When I made it this time I had no carrots, so I threw in half a bag of frozen peas and carrots. Tonight I will try a variation with (thawed) frozen meatballs instead of ground beef and a good amount of cooked rice that was leftover from last night.     Very good soup. I did use beef stock instead of broth. I cooked it on low/simmer for 60-75 minutes as I like my cabbage very well done, no crunch. Tasted even better the second day!

    1. No, stock is made from bones and is a thicker liquid. Broth is made mostly from meat or veggies. Broth is generally thinner but more flavourful.

    A very tasty, easy, filling soup. I used 2 cans instead of 3 tomato sauce, and added the cabbage in at the end. Covered it and let it set a few minutes while making garlic bread to go with. This left that cabbage with just a little body. Everyone enjoyed it and said to make it again.

    I hoped this soup would taste exactly like my cabbage rolls.  When it didn’t I added 4 strips of minced bacon fried just short of crisp.  That did it!  Delicious.  Thank you so much for this recipe .  I’ve passed it on to my 2 sons

    One of my wife and I’s favorite winter recipes. We don’t eat meat so we omit the ground beef and use vegetable broth instead of beef broth. I use a little more cabbage, carrots and rice than the recipe calls for. I omit the brown sugar as well. It’s so amazing and the leftovers are even better. Thank you for sharing this delicious recipe.

    1. yes just cook the ground beef first, then put it into the crockpot, dump the rest into the crockpot, this was amazing. add parsley at the end so it stays fresh.

    I made this for the first time tonight, it was delish!! My 10 yr. old said it was one of the best things he’s ever eaten. The only thing I changed was added a few more carrots and some Italian season. I will definitely be making this again.

  114. Sounds good, but I’d omit sugar, and vegetable oil is sooo bad for you. I’d choose a healthier option. Can’t wait to try it with those changes.

      This was so good! I added quinoa instead of rice, doubled the carrots and omitted the sugar and it was delicious!!

  117. I made it low carb.  Changed the rice to cauliflower ice, and added a bit of sugar free maple syrup instead of brown sugar.  I also changed the burger to mild Italian sausage.  I make a lot of soup, and my family told me it was the best they had ever had!

    Amazingly easy and very tasty soup!  I do not eat red meat, so substituted beef for ground turkey and used chicken broth.  The only thing I added was 2 TB Mrs Dash Italian Seasoning and doubled the carrots 🙂
