Tortellini Pasta Salad

I love cheese filled tortellini. It’s one of my kids favorite things to eat. We decided to try and make something new with our favorite pasta, instead of just the usual Alfredo sauce.

Pasta Salad seemed like the perfect idea!

We used all of a bunch of veggies like cucumber, peppers, tomatoes. We also added two kinds of cheese; parmesan and mozzarella. Of course, don’t forget the salami and pepperoni!

Homemade Dressing

You can easily make the dressing by adding you vinegar and olive oil with your basil, garlic and oregano in a jar. Then, shake it up!

Pour your mixture over the pasta and veggies and mix. So simple!

Go ahead and serve this the same day for the freshest flavors. You can though, make it the day before your BBQ to save time. It will store in the fridge for 2-3 days tops.

Tortellini Pasta Salad

Tortellini Pasta Salad is packed with cheese-filled tortellini, salami, pepperoni, and a plethora of colorful veggies. Drizzle a simple homemade dressing over the top, and dig in!

Ingredients
  

  • 19 ounce package frozen cheese-filled tortellini
  • 1 cup black olives sliced in half
  • 1 cup orange bell pepper diced
  • 1 cup salami slices quartered
  • 1 cup pepperoni slices quartered
  • 1 cup grape tomatoes sliced in half
  • 1 cup cucumber peeled, sliced, and cut into quarters
  • ¼ cup parsley chopped
  • ½ cup grated parmesan cheese
  • 8 ounce package mozzarella pearls
  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • 1 teaspoon dried basil
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano

Instructions

  • Cook tortellini according to package directions.
  • In a small jar, pour olive oil, red wine vinegar, dried basil, garlic powder, and dried oregano. Seal the jar and shake to combine.
  • Combine all other ingredients in a large bowl. Toss with pasta.
  • Pour dressing over the salad and toss until well combined.
  • Serve immediately for best results or refrigerate up to 3 days.
