Ingredients

  • 5 large eggs
  • 1/2 medium red bell pepper chopped
  • 1/2 medium green bell pepper chopped
  • pinch of salt and pepper
  • 8 slices bacon fried
  • 8 ounces refrigerated crescent rolls
  • 1 cup cheddar cheese shredded
  • 1 egg + 2 Tbsp of water for egg wash, optional

Instructions

  • Preheat oven to 375 F degrees. In a bowl beat the eggs with the chopped peppers, salt and pepper.
  • Scramble the mixture and set aside.
  • Lay out the crescent rolls on a parchment paper, with the short ends overlapping and the top of the triangle pointing outward (the dough should kind of look like a star).
  • Lay a piece of bacon over each crescent roll.
  • Add half of the cheese around the ring.
  • Spoon the scrambled eggs around the base of the ring and top with the remaining cheese.
  • Fold the crescents inward, over the eggs, and try to tuck them under the center.
  • Brush the dough with an egg wash (1 egg + 2 tablespoons of water combined)
  • Bake for 20 minutes or until the crescents are cooked and golden brown.
