  • Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • In a microwave-safe bowl, combine the peanut butter, honey, butter, brown sugar, and cinnamon. Heat in 30-second intervals, stirring after each, until the mixture is smooth and well combined.
  • Stir the vanilla extract into the warm peanut butter mixture.
  • In a large mixing bowl, add the rolled oats and chopped roasted peanuts. Pour the peanut butter mixture over the oats and peanuts, stirring until everything is evenly coated.
  • Spread the granola mixture onto the prepared baking sheet in an even layer.
  • Bake for 30 minutes, stirring halfway through to ensure even toasting.
  • Remove the granola from the oven and let it cool completely on the baking sheet.
  • Once the granola is fully cooled, stir in the semi-sweet chocolate chips. Transfer to an airtight container for storage. Enjoy!
