Many people have had Christmas Crack, which is a toffee made from saltine crackers, but this cracker candy recipe is even better. Everything about these crackers makes an amazing dessert that everyone is going to love.
Are these Rolo cookies?
No. These are not Rolo Cookies. Since these are not cookies, that isn’t what most people would call them. However, you do not have to use the name I use for this dessert. You can call this cracker candy anything you want. Stuffed cracker cookies, Rolo treats, cracker treats, whatever you choose works for this recipe!
Can I dip this Rolo candy recipe in chocolate?
I love how the salty crackers go together with the sweetness of the Rolos. You can make this Rolo candy recipe even more decadent by dipping the whole thing into chocolate. This makes chocolate-coated caramel-filled Ritz crackers. You can dip only one side or you can dip both sides. If you want to dip both sides, wait for the first side to harden before dipping the other side, or put the cracker candy on a cooling rack and pour the chocolate over top, then flip to do the other side.
Tip: If you dip these in chocolate, you can also sprinkle the tops with some kosher salt. The salted caramel flavor is super popular, and this is a great option to add to this recipe.
How to Store Rolo Stuffed Ritz Crackers
You will want to store this Rolo cracker candy in an airtight container. You can use a container with a lid or use a freezer bag to keep these cracker candies from getting stale.

How to make Rolo Stuffed Ritz Crackers
Start by placing 20 Ritz crackers on a parchment-lined cookie sheet. Next, add a Rolo on top of each cracker.
Place the cookie sheet into the oven, set to 350, for about 5 minutes. Leave it in the oven just until the Rolo starts to melt. Remove it from the oven and put another cracker on top and press it into place.
Let the crackers stand for 5 minutes before serving.
Rolo Stuffed Ritz Crackers
Ingredients
- 40 Ritz crackers
- 20 ROLO candies
- Parchment paper
- Cookie sheet
Instructions
- Place 20 Ritz crackers with the top side down on a Parchment paper lined cookie sheet, then place a ROLO candy in the middle of each cracker.
- Place the cookie sheet in the oven at 350 degrees for about 5 minutes, or until the ROLO just begins to melt, then remove the cookie sheet from the oven, and place the remainder of the Ritz crackers on top of the ROLO's and press the crackers together.
- Let the crackers stand for 5 minutes before serving. Enjoy!

I place a miniature marshmallow on top of the roll before putting in oven. It then really tastes like a s’mores. Yum Yum

These Rolo stuffed ritz are by far the best and I mean the best, they are the bomb. Problem is I eat to many of them. I make these every Christmas and people are grabbing them I guess they can’t get enough of them and I know exactly what they mean.
