This crock pot Coca Cola pot roast recipe combines everything from my other favorite pot roast recipes, with a twist. It’s made in the crock pot, just like my classic slow cooker pot roast; there’s beefy onion soup mix in the sauce to add extra savory flavor, just like in my French onion pot roast, and there’s more flavor than I can easily describe in words, just like my Mississippi pot roast. Basically, in simple terms, this Coca Cola pot roast is perfection. The soda tenderizes the beef while adding a subtle caramelized flavor that blends perfectly with the savory seasonings. It’s the kind of cozy, stick-to-your-ribs dinner that will have everyone going back for seconds.

  • Beef chuck roast – Chuck roast is my preferred cut of beef for pot roast. However, you can swap chuck roast for brisket or bottom round if that’s what you have on hand.
  • Spices – Salt, pepper, smoked paprika, onion powder, and garlic powder season the roast.
  • Butter – For searing the roast. Olive oil also works in a pinch.
  • Baby potatoes – Feel free to substitute Yukon gold or sweet potatoes for a different flavor.
  • Veggies – Carrots & onions are the classic pot roast sides.
  • Coca Cola – I used regular Coke, not Diet or Zero. The off-brand also works. Use Pepsi, Dr. Pepper, or root beer for a fun twist.
  • Worcestershire sauce – Adds beefy, savory flavor to the sauce.
  • Onion soup mix – I used the beefy onion soup mix for added flavor. The regular dry onion soup mix works in a pinch but won’t add as much beefy flavor.
  • Brown gravy mix – Adds rich, savory flavor to the sauce.

How To Make Coca Cola Pot Roast in the Slow Cooker

There’s minimal hands-on time for this recipe since the slow cooker does all the work. The printable instructions can be found in the recipe card below.

  • Season the roast. Generously season the roast with the spices.
  • Sear the roast. Melt the butter over medium high heat. Sear the roast until browned on each side.
  • Add to the crock pot. Place the seared roast in the crock pot. Add the potatoes and veggies. In a bowl, whisk together the soda, Worcestershire sauce, soup mix, brown gravy, and garlic. Pour over the roast.
  • Slow cook. Cook the roast on low for 8 hours or on high for 6 hours.

Tips for the Best Pot Roast

Here are a few things to keep in mind when making crock pot coca cola pot roast.

  • Sear for flavor. Browning the roast before adding it to the slow cooker builds a deeper, richer flavor in the final dish.
  • Cut veggies evenly. Keep potatoes and carrots roughly the same size so they cook evenly.
  • Don’t skip the sauce mix. Whisking the cola, Worcestershire, soup mix, and gravy together before pouring ensures all the flavors meld evenly into the broth.
  • Low and slow wins. For the most tender beef, cook on low for 8 hours instead of high. It’s worth the wait!
  • Thicken at the end. If you want a thicker gravy, remove the roast and veggies, then whisk a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) into the sauce and cook on high for 5–10 minutes until thickened.

  • Pour the sauce over the roast and veggies.
  • Cover and cook on low for 8 hours or high for 6 until the meat is tender and falls apart.
  • Garnish with parsley and serve!
