I love a good breakfast casserole, especially on holiday and weekend mornings. This Amish breakfast casserole is in rotation with other family favorites, like tater tot breakfast casserole, Christmas breakfast casserole, and croissant breakfast casserole. It’s one of my favorites because the prep takes less than 15 minutes, and there’s a little bit of everything in it. It’s a highly requested favorite among the family!

  • Super cheesy. There are two types of shredded cheese, plus cottage cheese, in this casserole. That’s over 4 ½ cups of cheese total! The cottage cheese makes the casserole extra creamy while the Swiss and cheddar cheese ensure melty cheesy goodness in every bite.
  • Hearty & filling. Amish breakfast casserole is loaded a little bit of everything – eggs, hash browns, sausage, and cheese. It’s satisfying and filling for even the hungriest of bellies in the morning.

Recipe Ingredients

  • Breakfast sausage – Any ground breakfast sausage works great. Feel free to use a regular seasoned breakfast sausage, maple breakfast sausage, or any other.
  • Onion – Yellow onion adds flavor to the sausage.
  • Eggs – Large eggs, lightly beaten before added to the dish.
  • Shredded hash browns – Thaw the frozen shredded hash browns ahead of time, using paper towels to remove any excess moisture.
  • Cheese – I used a combination of cheddar cheese and Swiss cheese. I like the variety in flavor and they both melt very well. Freshly shredded cheese is best.
  • Cottage cheese – Small curd cottage cheese adds flavor, creaminess, and protein to the casserole.

How to Make Amish Breakfast Casserole

This casserole is so easy to make that it can be whipped up on even busy weekday mornings. The printable instructions can be found in the recipe card below.

  • Prep. Preheat the oven to 350F. Grease the baking dish.
  • Cook the sausage. Cook the sausage and onion over medium-high heat for about 8-10 minutes, until the sausage is browned and fully cooked and the onions are softened. Drain any grease then transfer to a mixing bowl.
  • Combine the ingredients. Add the other ingredients to the bowl with the sausage. Stir until well combined. Transfer to the baking dish in an even layer.
  • Bake. Bake for 45-50 minutes, until the eggs are set and the cheese is bubbly.
  • Enjoy! Let cool for 5-10 minutes then slice and enjoy. Top with sliced chives if desired.

Make It Ahead

Have a busy morning ahead? Amish breakfast casserole is perfect for preparing the night before. Just assemble the casserole as described, cover, and refrigerate.

Pop it in the oven the next morning, adding 5-10 minutes to the baking time if it’s cold from the fridge.

Recipe Tips & Variations

Below are a few easy ways to customize this Amish breakfast casserole recipe.

  • Add some veggies. You can add diced bell peppers, mushrooms, or spinach for extra flavor and nutrition. Just cook them with the sausage or after the sausage, depending on the veggie. Some can just be stirred into the egg mixture.
  • Try a different meat. Feel free to swap the breakfast sausage for a pound of cooked, crumbled bacon or diced ham. Or add a few different breakfast meats!
  • Swap the cheese. Feel free to use other cheeses like Monterey Jack, Colby, or pepper jack for a different flavor. I typically use whatever is in the fridge. I do recommend using at least 2 different types of cheese to give the casserole a variety in flavor.
  • Make sure it’s done baking. To check if the casserole is finished baking, insert a butter knife in the center. It should come out with some melted cheese but no raw egg.

How to Store & Reheat Leftovers

  • Fridge. Store leftover Amish breakfast casserole in an airtight container in the refrigerator for up to 3-4 days.
  • Freezer. This casserole freezes well. Wrap tightly in plastic wrap and foil, then freeze for up to 2 months. Thaw overnight in the fridge before reheating.
  • Reheat. Reheat individual portions in the microwave for 1-2 minutes, or warm the entire casserole in a 350°F (175°C) oven until heated through.

Ingredients
  

  • 1 pound breakfast sausage ground
  • 1 medium yellow onion diced
  • 9 large eggs lightly beaten
  • 4 cups frozen shredded hash browns thawed
  • 2 cups shredded cheddar cheese
  • 1 1/2 cups small curd cottage cheese
  • 1 cup shredded Swiss cheese

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
  • Heat a large skillet over medium-high heat. Add the ground sausage and diced onion. Cook until the sausage is browned and cooked through, and the onions are softened, about 8-10 minutes.
  • Drain any excess grease from the skillet, then transfer the sausage and onion mixture to a large mixing bowl.
  • Add the beaten eggs, thawed hash browns, shredded cheddar cheese, cottage cheese, and shredded Swiss cheese to the bowl. Stir everything together until well combined.
  • Pour the mixture into the prepared baking dish and spread it out evenly.
  • Bake in the preheated oven for 45-50 minutes, or until the eggs are set and the cheese is melted and bubbly.
  • Remove the casserole from the oven and let it cool for 5-10 minutes before slicing.
