Easy Baked Corned Beef Brisket
Corned beef is traditionally boiled with cabbage, but we love to slow bake it in the oven giving you the most tender results! This baked corned beef is topped with beer and stone ground mustard. Serve it with oven roasted vegetables for a delicious complete meal!

- Mustard – Stone ground mustard is best.
How To Cook Corned Beef in the Oven
Just a few simple steps to make this juicy and tender corned beef brisket (get the full directions in the recipe box below).
- Preheat the oven to 325 degrees.
- Rinse the corned beef brisket and pat dry.
- In a baking dish, pour the beer and brush the stoneground mustard and seasoning packet over the top of the corned beef.
- Cover with foil and roast for 3 ½ hours. Remove the foil and roast for another 30 minutes.

We love to serve this baked corned beef with oven roasted potatoes or Irish mashed potatoes and cabbage steaks for a St Patrick’s day dinner. Leftovers are perfect for a classic Reuben sandwich!

Tips and Variations
Here are a few tips and tricks!
Mustard – The stone ground mustard can be replaced with Dijon mustard or brown mustard. I do not recommend using plain yellow mustard.
Beer – I like to use a lighter beer for roasting, but you can use any beer that you love. Try using a stout such as Guinness for St. Patrick’s Day dinner.
Additions – If you prefer a bit of sweetness to your corned beef, add 2 Tablespoons of dark brown sugar to the mustard.
How Long to Cook Corned Beef in the Oven? Depending on the weight of your brisket will determine your baking time.
- 1 lb corned beef : 1 hour
- 2 lb corned beef: 2 hours
- 2.25 lb corned beef: 2 hours 15 minutes
- 2.5 lb corned beef: 2 hours 30 minutes
- 2.75 lb corned beef: 2 hours 45 minutes

Baked Corned Beef (only 3-ingredients)
Ingredients
- 4 pounds corned beef brisket (with seasoning packet), rinsed with cold water, patted dry
- 1 cup beer (Lager or Pilsner)
- 1/4 cup stone ground mustard
Instructions
- Preheat the oven to 325℉ and prepare a 13 x 9 x 2 inches baking dish with non stick cooking spray.
- Add the corned beef brisket to the baking dish with the fat side up. Pour in the beer and brush the stone ground mustard and seasoning packet over the top of the corned beef.
- Cover tightly with foil and roast for 3 ½ hours. Remove the oven and take off the foil, roast for another 30 minutes uncovered.
- Let rest for 10 minutes before slicing, serve with potatoes and carrots. Enjoy!

Hi Winn. I would try gingerale or even beef broth.
I haven’t made this yet because I’m wondering if I could add the standard corned beef veggies to the pan with the meat?
Hi Susie. Yes, you can add the veggies to the pan, but you will not want to leave them in for the full 3 1/2 hours. Depending on what you are adding, I would recommend adding potatoes and carrots with about 1 1/2 hours left and cabbage at 1 hour or less left.
