These oven roasted potatoes are one of those side dishes that you can whip up with almost any entree. They’re definitely one of my go-to’s when I can’t quite decide what to make. All you need is potatoes, olive oil, and a few herbs for flavor.

My favorite part about these potatoes is the fact they’re crispy on the outside but tender on the inside. Soaking them in water may seem like an extra, unnecessary step but it’s key to getting that perfect texture.

  • Soak the potatoes. Clean and quarter or halve the potatoes. Soak in water for 30 to 60 minutes.
  • Season the potatoes. Drain and dry the potatoes with a paper towel. Spread on a baking sheet then drizzle with olive oil and toss to coat. Combine the seasonings in a bowl then use to season the potatoes.
  • Bake. Bake the potatoes for 40-50 minutes, until fork tender. Enjoy!

Tips for Success

Here are a few things to keep in mind when making this potato dish.

  • Don’t skip soaking the potatoes. The water bath helps to draw out the starch, which is one of the reasons these oven roasted potatoes are nice and crispy.
  • Make all the pieces equal. Whether you need to halve or quarter the potatoes will depend on their size but all of the potatoes should end up more or less equal in size, so you don’t have any over- or under-cooked potatoes.
  • Adjust the seasonings. Feel free to adjust the mix of herbs and seasonings to your preference. You can even use seasoning blends, like Ranch seasoning or Italian seasoning.

These oven roasted potatoes make an easy side dish for any meal. A few of my favorite things to serve these with include buffalo chicken zucchini boats, BBQ steak kabobs, honey garlic pork chops, bourbon chicken, and air fryer chicken tenders. Sometimes I add my black bean and corn salad as a veggie side, which pairs with this perfectly.

Proper Storage

  • Fridge. Store leftover potatoes in an airtight container in the fridge for up to 4 days.
  • Reheat. Reheat in the microwave or in the oven. The oven will help maintain the crispy texture a bit more.

The Best Oven Roasted Potatoes

Ingredients
  

  • 1½ – 2 pounds small red potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh parsley chopped finely
  • 2 teaspoons fresh thyme chopped finely
  • 2 teaspoon fresh rosemary chopped finely
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper

Instructions

  • Clean and cut potatoes in half or quartered, depending on size
  • Add potatoes to bowl of water for 30-60 minutes
  • Preheat oven to 375 degrees
  • Drain potatoes and pat dry with paper towel
  • Spread evenly on baking sheet
  • Drizzle with olive oil and toss to coat
  • In a small bowl, combine garlic powder, herbs, salt and pepper until well combined
  • Spoon over potatoes and toss to coat
  • Bake for 40-50 minutes or until potatoes are fork tender
  • Serve immediately
  • Store leftovers in refrigerator
