Blueberry oatmeal muffins are one of my favorites. They are perfect for something to eat when you are in a hurry. If you are looking for a fantastic way to enjoy these muffins with your coffee trying grilling them. Slice the muffin in half and add butter to each half. Place them in a hot skillet until the muffin side is golden brown.
Tips for Keeping Muffins Fluffy
When you are making homemade muffins, you want them to be light and fluffy. There are 2 things that are needed to make light and fluffy muffins. First use butter. The butter will create the air pockets in the batter and help to get that airy feel to the muffins. The other is the leavening. The baking soda and baking powder work together to make the muffins fluffy. Too little and the muffins will not rise. Too much and the muffins will rise rapidly and then fall back into itself.
Can I Use Frozen Blueberries in Blueberry Oat Muffins?
If you want to use frozen blueberries you can, however, fresh are better. You will want to make sure the blueberries are thawed as you have dried as much moisture off of them as possible. Frozen blueberries will color the muffins more than fresh blueberries will.

- Buttermilk
- Flour
- Butter
- Egg
- Fresh blueberries
- Baking powder
- Baking soda
- Salt
- Brown sugar
How to Make Blueberry Oatmeal Muffins
Line a muffin pan with wrappers and set it aside.
In a smaller bowl, combine the rolled oats and buttermilk. Let it sit for 10 minutes.
Preheat oven to 400F.
Add the egg and melted butter to the oats and buttermilk and mix it together well.
In a large mixing bowl, mix together the flour, baking powder, baking soda, salt, and sugar.
Combine the oat mixture and the dry ingredients. Stir until all ingredients are combined.
Gently fold the blueberries into the mixture.
Spoon the batter into the prepared muffin tin filling the cups ¾ full.
Bake for 20 – 25 minutes.
Once the muffins come out of the oven, cool them on a wire wrack.

- 1 egg
- 1 cup fresh blueberries
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¾ cup lightly packed brown sugar
Instructions
- Place liners in a muffin tin. Set aside.
- In a small bowl mix together the rolled oats and buttermilk. Let stand 10 minutes.
- Preheat oven to 400F.
- Add the egg and melted butter to the oat mixture and mix well.
- In a large mixing bowl, combine the flour, baking powder, baking soda, salt and sugar.
- Add the oat mixture to the dry ingredients and stir until all ingredients are combined.
- Gently fold in the blueberries.
- Spoon the batter into the prepared muffin tin filling the cups ¾ full.
- Bake for 20 - 25 minutes.
- Cool on a wire rack.
