Christmas Peppermint Patties

I tend to go on a peppermint craze around the Holidays and these Christmas Peppermint Patties hit the spot! They are so pretty for Holiday parties and always such a hit. I could eat a whole bowl of these if I am not careful.

 

Christmas Peppermint Patties

Our talented friend Trish from Mom on Timeout came up with this idea and we have put our own spin on it.

Christmas Peppermint Patties

  • 1/2 block (4 oz.) cream cheese, softened
  • 4 cups confectioners’ sugar, divided
  • 1/4 tsp. peppermint extract
  • 1-2 tbsp. milk
  • red and green gel food coloring
  • Sugar (about 1 cup)

Directions 

In a small bowl, mix the softened cream cheese and peppermint extract with a hand or standing electric mixer. Add 2 cups confectioners’ sugar alternating with the milk; beat well. Stir in 1 cup confectioners’ sugar. Turn onto a work surface sprinkled with remaining confectioners’ sugar; knead until sugar is absorbed and mixture is smooth.

Divide the mixture into three portions. Tint one portion red and the other one green; leave remaining portion white. Shape into 3/4-in. balls; roll in sugar, then pop them in the refrigerator to cool and harden. Flatten with a fork like you would a peanut butter cookie.  Store mints in the refrigerator when not being served. These freeze really well also!
