Crockpot dinners are my go-to during busy seasons of life. I especially love ones where I can dump everything in the crockpot in the morning and come home to dinner ready to enjoy, like this crockpot sausage and potatoes. It takes me less than 10 minutes to prepare in the morning! This makes a frequent appearance on our dinner table, in rotation with other easy crockpot dinners like slow cooker sausage and peppers and crockpot pizza casserole.

- Easy weeknight dinner. Since there’s minimal hands-on involvement, this recipe is perfect for those weeknights when there’s just not enough time to cook. There’s protein, potatoes, and veggies so no need to make any sides!
- Lots of flavor. There’s no shortage of flavor here. The smoked sausage, onion, and garlic add lots of flavor and the diced tomatoes and green chilies add just a bit of heat. So good!

Recipe Ingredients

- Sausage – I like to use smoked sausage but other varieties are fine too.
- Potatoes – Baby potatoes are ideal because they hold up well while slow cooking and just need to be cut in half. If yours are on the bigger side of baby potatoes, quartering them is also fine.
- Garlic & onions – Aromatics to add flavor to the dish.
- Green beans – Fresh green beans are best. Frozen releases too much moisture and canned are too soft.
- Diced tomatoes and green chilies – Such as Rotel. Do not drain as the liquid is needed for cooking.
- Butter – Adds richness to the dish.
- Spices – Italian seasoning, smoked paprika, salt, and pepper.
How to Make Crockpot Sausage and Potatoes

- Add the ingredients. Add the sausage, potato, onions, garlic, and green beans to the crockpot. Top with the Rotel, butter, and seasonings.
- Cook. Cover and cook for 6-8 hours on low or 3-4 hours on high. The potatoes should be fork tender when it’s done.

Recipe Variations
Here are a few easy ways to customize this crockpot sausage and potatoes recipe.
- Try other sausage. Some options are smoked sausage, kielbasa, hot links, and bratwurst. You can also use little smokies, no need to slice.
- Other potato options. You can use gold potatoes, red potatoes, russet potatoes, or baby potatoes. Any potatoes that hold up well while slow cooked work great. Just be sure to cut them into 2 inch chunks for even cooking.
- Add more veggies. Feel free to add other vegetables like bell peppers, mushrooms, and zucchini. Fresh veggies work best.
- Make it creamy. Instead of using diced tomatoes, make it creamy by adding a can of cream of chicken or cream of mushroom soup.

How To Store & Reheat Leftovers
- Fridge. Refrigerate leftover crockpot sausage and potatoes in a sealed container for 3 or 4 days.
- Reheat. Reheat on the stovetop over medium heat for 10-12 minutes until heated through. Individual servings can also be reheated in the microwave.

- 2 pounds smoked sausage sliced
- 2 pounds baby potatoes halved
- 2 medium onions chopped
- 3 garlic cloves minced
- 12 ounces fresh green beans
- 10 ounces diced tomatoes and green chilies with liquid
- 4 Tablespoons butter (1/2 stick)
- 1 teaspoon Italian seasoning
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
Instructions
- Add sausages, baby potatoes, onions, garlic, and green beans to the crockpot.
- Top with diced tomatoes and green chilies, butter, and seasonings.
