Whole Chicken and Stuffing Crockpot Recipe

Who said stuffing could only be enjoyed on Thanksgiving? This quick and easy dinner is perfect to throw together when you are expecting a busy day. I hardly have the energy to cook after a long day of work or errands, so crock pot meals are a simple way we can all still enjoy a tasty home-cooked meal.

We eat a lot of chicken in our house, and sometimes it’s difficult to find new ways to serve it that picky kids will enjoy. My children love this meal! It makes plenty of leftovers that they will actually eat for lunch over the weekend. 

This crock pot chicken and stuffing is amazing on its own, but you can also add in a veggie or another quick side dish if you choose. I recommend Honey Glazed Carrots, Mashed Sweet Potatoes, or sauteed green beans!

Key Ingredients You’ll Need

Believe it or not, purchasing a whole chicken typically costs less than buying pieces. Plus, you will have leftovers that you can enjoy for lunch or turn into another dinner. The veggies in this recipe are also very cheap!

  • Carrots: Peeled and diced into small pieces.
  • Onion: A medium-diced yellow onion is perfect. 
  • Celery: Two diced celery ribs are just the right amount for this recipe.
  • Whole Chicken
  • Butter: I use salted butter. Melt it in the microwave before adding.
  • Poultry Seasoning: Any brand will work great.
  • Paprika
  • Stove Top Stuffing: Use any flavor of stuffing mix you prefer.

How To Make Crockpot Chicken and Stuffing

It’s super quick and easy to prepare this meal. Since it is cooked entirely in the crock pot, you don’t have to spend a lot of time in a hot kitchen.

  • Add Veggies. Prepare carrots, onion, and celery. Place in the bottom of the crock pot.
  • Clean and Add Chicken. Remove all of the insides from the whole chicken and place it on top of the veggies.
  • Season. Cover the chicken with melted butter, poultry seasoning, and paprika. Add salt and pepper if desired. 
  • Cook. Cover and cook on high for 5-6 hours.
  • Remove Chicken. Take the chicken out of the crock pot and place it on a large platter. Cover it with aluminum foil to keep it warm.
  • Add Stuffing. Reserve 1 ½ cups of liquid in the pot and add the box of stuffing. Stir and over.
  • Cook Longer. Cook the stuffing for 10 minutes and then fluff it with a fork.
  • Slice and Serve. Carve the chicken any way you like and serve with the hot stuffing.

Tips and Tricks

  • Save some of the liquid that you remove from the pot and use it to make gravy to serve with the chicken and stuffing.
  • Cooking. If you would like to cook on the low setting, it will be ready in 7-8 hours.
  • Chicken. To check the chicken for doneness, stick a thermometer in the thickest part of the thigh. It’s ready when it reaches 165 degrees F. Feel free to change out the whole chicken and use chicken breast or chicken thighs.
  • Store leftovers in the refrigerator in an airtight container for 2-3 days.
  • Serve with a side of sauteed green beans and cranberry sauce. We also like to top this with our easy turkey gravy.

Crockpot Chicken and Stuffing

Ingredients
  

  • 2 medium carrots diced
  • 1 small yellow onion diced
  • 2 medium celery ribs diced
  • 5 pounds whole chicken
  • 1/2 cup salted butter melted
  • 1 teaspoon poultry seasoning
  • 1 teaspoon paprika
  • 6 ounces box stove top stuffing any flavor

Instructions

  • Add the carrots, onion and celery to the bottom of the slow cooker, add the chicken on top of the veggies but make sure to clean out the inside of the chicken and throw away.
  • Pour the melted butter over top of the chicken and add the seasonings on top and rub it all over. You can add salt and pepper here if you’d like.
  • Place the lid on and cook on high 5-6 hours.
  • Remove chicken and set on a platter and cover with foil to keep warm. Remove all of the liquid but save 1.5 cups of liquid in the slow cooker. Leave all the veggies in there also.
  • Add the box of stuffing into the slow cooker and stir all around, add the lid back on and let cook for another 10 minutes. Fluff with a fork when done.
  • Now you can slice the chicken however you’d like and serve or you and place the chicken back in the slow cooker for a pretty presentation. Enjoy!
