Frankenstein Fiesta!

Frankenstein Quesadilla
We made this fun Halloween Frankenstein dinner using 2 spinach tortillas, shredded mexican cheese, black beans, and sour cream.

We cut the sides off of the round tortillas to give them a rectangle look. Cut the tops into a zig zag pattern. Save the scraps. We placed one tortilla on a plate and added our shredded cheese. Place the other tortills on top and pop it in the microwave for 1 minute.
Set aside for a few minites to cool down.

We used cooked black beans to make Frank’s hair, mouth, and pupils. Use sour cream for the eyes. Take the reserved tortilla scraps and make Frank’s electrodes.

This is so easy to make and the kids got such a kick out of it!
