Easy Gingerbread Sandwich Cookies

These Gingerbread Sandwich Cookies are so delicious! This recipe is so easy to make and doesn’t have many ingredients. Your family and friends will be so excited to bite into these cream-filled cookie sandwiches and they may just fall in love. Be sure to save this one!

Gingerbread is one of those flavors that go along with the holidays. If you are a fan of gingerbread, you can enjoy this sweet and spicy aroma in so many different ways during the holidays.  I make a variety of different recipes that use this delicious flavor throughout the holidays.

One of my family’s favorite go-to desserts now is my Gingerbread Snowflake Cookie recipe! These are so good!  Another favorite of my crew is my Gingerbread Mini Cheesecakes! These are really perfect little bites of deliciousness. And, of course, you can’t forget Gingerbread Man Cookies either. These Spice Cookies are another favorite.

  • Sugar- Both white and brown sugar are used in this reicpe.
  • Eggs- You will need your eggs at room temperature.
  • Vanilla extract- Use pure vanilla for the best flavoring.
  • Molasses- You can use dark corn syrup as a substitute.
  • Spices – Ginger, cinnamon, nutmeg, cloves, and salt add the classic gingerbread flavor to these gingerbread sandwich cookies.
  • Flour
  • Baking soda- Helps the cookies rise in the oven.
  • Powdered sugar- For the sweet frosting in the cookies.
  • Heavy whipping cream- Gives shape to the frosting.

Gingerbread Sandwich Cookies

Ingredients
  

Cinnamon Frosting

Instructions

  • Preheat oven to 350 degrees and line two cookie sheets with parchment paper
  • Using a large bowl, beat together the butter, sugar and brown sugar until combined and fluffy
  • Beat in the egg, vanilla and molasses into the batter until combined and fluffy
  • Using a medium bowl, whisk together the flour, cinnamon, cloves, nutmeg, ginger, salt and baking soda
  • Gradually beat in the dry ingredients until a dough forms
  • Using a small ice cream scooper, or tablespoon, scoop out some dough into your hands and roll into a ball
  • Roll the dough ball into the 1 C of sugar
  • Place 12 cookie dough balls onto the cookie sheets, about 2 inches apart
  • Bake in the oven for 6-8 minutes or until the edges look firm but the center is still soft
  • Remove from oven and place onto the counter to cool completely

Frosting

  • Using a standing mixer, beat together the butter, powdered sugar, vanilla, heavy whipping cream and ground cinnamon until combined, smooth and stiff
  • Scoop the frosting into a piping bag
  • Match up the baked cookies to their size partner
  • Using the piping bag, pipe small dollops of frosting onto the bottom cookie
  • Place the top cookie back on top of the frosting and lightly press
  • Enjoy!
