Start by picking your zucchini. The best ones to freeze will be young squash that are tender. The rinds on these vegetables are thin and the seeds are small.

The first thing you want to do when you are ready to freeze zucchini is to make sure to clean it well. You can wash it well in cold water or use a vinegar and water solution.

Next, you will want to decide how you are going to use the zucchini when you are ready to cook it. You might want to chop it into small pieces, shred it, or use a spiralizer to cut it into noodles.

The next step is to blanch the zucchini. This helps to maintain the bight green color, helps to save me vitamins, and softens the zucchini to make it easier to store. You want to do this step for best results. When you want to blanch the zucchini, start by 1 gallon of water for every pound of zucchini. Add the vegetables to the boiling water for 1 minute and then remove it. Plunge the zucchini into ice water for 1 minute. This stops the cooking process.

You want to Flash Freeze the zukes until they are solid. Place them on a baking sheet that is lined with parchment paper. Once it is frozen, move it to a freezer bag.
