Are Zucchini Fritters Keto

When you use a keto friendly oil and a keto friendly dipping sauce, these zucchini fritters are keto friendly. Because it uses almond flour instead of using traditional flour, the net carbs are kept low.

How do You Get Excess Water Out of Zucchini?

Once the zucchini has been grated use clean hands to squeeze the extra water from the zucchini. Another way to get rid of the extra water in the zucchini is to place it in a sieve and press it with a spoon. This will cause the extra water to be forced out. Then place the zucchini on paper towels in order to dry up the rest of the water.

Why are My Fritters Soggy?

Fritters that are soggy are not tasty. If you find that your zucchini fritters are soggy, it could be for one of 2 reasons. One reason that the fritters are soggy can because the oil was not hot enough when you started to cook the fritters. This will cause the fritters to sit in the oil for longer than it needs to be and this allows it to soak up more oil. The other reason the fritters may be soggy is that you did not get the excess water out of the zucchini before making the fritter.

Maybe silly question but is it 64 calories per one fritter or for all 10?

Made these tonight and I ate more than I likely should have before bed with dill pickle hummus

I made this exactly as directed and they were very good. however, the fritters are very moist and I didn’t find that they stayed crispy for long.

Definitely be sure to keep them small and thin so they have a chance to get crispy.  The first few I made were too big.

When I make again I will add some cornstarch to help them get super crispy.

    1. New at this Keto, low carb style of eating. I also do not fry many foods. Would rice flour help make them crispy as well? I have both brown rice flour and white rice flour in my pantry. Thank you In Advance for your time and for writing this review!

  3. These zucchini fritters look delicious! But I’d love it if you could provide nutritional value for this recipe.

  4. Sounds lovely and I’ll try it but first I need to know how much grated zucchini I need. Zucchinis come in a wide range of sizes. Thanks!

Could you substitute the ricotta cheese for cottage or cream cheese? My family isn’t particularly fond of ricotta.

    1. Are used cottage cheese but I did end up adding A half a cup of cornmeal to make it a little thicker. Turned out yummy!
