- Beans – I used both canned black beans (drained and rinsed) and refried beans in this recipe.
- Flour tortillas – 6 inch tortillas are best for this recipe.
- Colby Jack cheese – Feel free to substitute Colby Jack cheese with Mexican blend, Monterey Jack, or sharp cheddar cheese for different flavor profiles.
How To Make Mexican Casserole
This casserole is super easy to make. Here’s how to do it. You can find the printable instructions in the recipe card below.
- Prep. Preheat the oven to 375F. Lightly grease the baking dish.
- Make the beef mixture. Brown the beef until fully cooked. Drain any grease. Add in the veggies and saute until soft. Stir in the taco seasoning and other seasonings. Mix well to combine. Add the tomato paste, diced tomatoes, and black beans. Stir to combine and simmer for about 3 minutes.
- Assemble. Place a single layer of tortillas in the baking dish. Spread half of the refried beans over the tortillas and top with half of the beef mixture and half of the Colby Jack cheese. Repeat the layers, finishing with the cheese on top.
- Bake. Cover the dish with foil. Bake for 20 minutes then remove the foil and bake for an additional 10 minutes, until bubbly and golden brown.
- Enjoy. Cool for a few minutes before slicing. Serve with your favorite toppings and enjoy!

Ingredients
- 1 lb ground beef
- 1 onion chopped
- 1 red bell pepper chopped
- 1 green bell pepper chopped

- 1 ounce taco seasoning

- Salt and pepper to taste

- 16 ounces refried beans
- 10 6- inch flour tortillas
- 2 cups shredded Colby Jack cheese
Instructions
- Preheat your oven to 375°F (190°C), and lightly grease a 9×13-inch baking dish.
- In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
- Add the chopped onion, red bell pepper, green bell pepper, and minced garlic to the skillet. Sauté until the vegetables are soft, about 5 minutes.
- Stir in the taco seasoning, oregano, salt, and pepper. Mix well to combine the flavors.
- Add the tomato paste, the can of diced tomatoes with green chilies, and the can of black beans Stir to combine, allowing the mixture to simmer for about 3 minutes.
- In the prepared baking dish, place a single layer of tortillas at the bottom of the baking dish. Spread half of the refried beans over the tortillas. Then, spread half of the beef and bean mixture over the refried beans, followed by half of shredded Colby Jack cheese. Repeat the layering process with the other half of the ingredients, finishing with a layer of cheese on top.
- Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
