- Ground beef – I like to use an 80/20 that’s not super fatty but still has lots of flavor.
- Garlic & onion – Add flavor to the beef.
- Red enchilada sauce – You can grab a can at the store or try my homemade enchilada sauce.
- Green chilies – Add a bit of heat to the casserole.
- Black beans – Drain and rinse before using.
- Corn – Canned corn is easiest here. Be sure to drain first.
- Spices – Chili powder, cumin, salt and pepper.
- Corn tortillas – I find the texture of corn does best in this recipe but you can use flour if you prefer.
- Cheese – I used Colby jack but Monterrey Jack or a Mexican blend would work too.
- Cilantro – For garnish.

- Cook the beef. Cook the ground beef until browned then add the onions and garlic.
- Add the other ingredients. Stir in the enchilada sauce, green chilies, beans, corn, and seasonings. Simmer for 5-7 minutes.
- Assemble the casserole. Place a layer of tortillas in a baking dish. Spread half of the beef mixture evenly over it then sprinkle on some cheese. Repeat with the remaining tortillas, beef mixture, and cheese.
- Bake. Cover with foil and bake for 20 minutes. Remove for the foil and bake for an additional 10-15 minutes, until melted and bubbly. Garnish with chopped cilantro.

- Add more to the filling. You can customize this casserole by adding ingredients like sliced olives, diced bell peppers, or jalapeños for extra flavor.
- Swap the beef. Substitute ground beef with ground chicken or turkey for a lighter version of this dish.
- Bake covered. This ensures that the cheese doesn’t burn before the rest of the ingredients warm through.
- Make the filling in advance. Feel free to make the filling a day or so in advance and keep it in the fridge. You may just need to add a minute or two to the bake time since the filling will be cold.

Ingredients
- 1 lb ground beef
- 1 small onion finely chopped
- 2 cloves garlic minced
- 10 oz red enchilada sauce
- 4 oz diced green chilies
- 15 oz black beans drained and rinsed
- 15 oz can corn drained
- 2 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 10 corn tortillas
- 2 cups shredded colby jack cheese
- Chopped fresh cilantro for garnish
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a skillet over medium heat, cook the ground beef until browned. Add the chopped onions and garlic, cooking until softened.
- Stir in the red enchilada sauce, diced green chilies, black beans, corn, chili powder, cumin, salt, and pepper. Simmer for 5-7 minutes.
- Place a layer of corn tortillas at the bottom of the prepared baking dish.
