What You’ll Need

This beef enchilada casserole recipe requires just a handful of easy-to-find ingredients. Scroll down to the recipe card below for measurements.

  • Ground beef – I like to use an 80/20 that’s not super fatty but still has lots of flavor.
  • Garlic & onion – Add flavor to the beef.
  • Red enchilada sauce – You can grab a can at the store or try my homemade enchilada sauce.
  • Green chilies – Add a bit of heat to the casserole.
  • Black beans – Drain and rinse before using.
  • Corn – Canned corn is easiest here. Be sure to drain first.
  • Spices – Chili powder, cumin, salt and pepper.
  • Corn tortillas – I find the texture of corn does best in this recipe but you can use flour if you prefer.
  • Cheese – I used Colby jack but Monterrey Jack or a Mexican blend would work too.
  • Cilantro – For garnish.

How To Make Ground Beef Enchilada Casserole

  • Cook the beef. Cook the ground beef until browned then add the onions and garlic.
  • Add the other ingredients. Stir in the enchilada sauce, green chilies, beans, corn, and seasonings. Simmer for 5-7 minutes.
  • Assemble the casserole. Place a layer of tortillas in a baking dish. Spread half of the beef mixture evenly over it then sprinkle on some cheese. Repeat with the remaining tortillas, beef mixture, and cheese.
  • Bake. Cover with foil and bake for 20 minutes. Remove for the foil and bake for an additional 10-15 minutes, until melted and bubbly. Garnish with chopped cilantro.

Tips & Variations

Here are a few things to  keep in mind when making your ground beef enchilada casserole.

  • Add more to the filling. You can customize this casserole by adding ingredients like sliced olives, diced bell peppers, or jalapeños for extra flavor.
  • Swap the beef. Substitute ground beef with ground chicken or turkey for a lighter version of this dish.
  • Bake covered. This ensures that the cheese doesn’t burn before the rest of the ingredients warm through.
  • Make the filling in advance. Feel free to make the filling a day or so in advance and keep it in the fridge. You may just need to add a minute or two to the bake time since the filling will be cold.

Serving Suggestions

This beef enchilada casserole makes a great meal on its own. Feel free to add some typical enchilada toppings, like sour cream, avocado (or guacamole), and salsa.

Proper Storage

  • Fridge. Store leftovers in the fridge for up to 3 days, either in an airtight container or covered with plastic.
  • Reheat. Reheat the whole pan, covered, in the oven until heated through. Individual servings can also be reheated in the microwave.

  • Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  • In a skillet over medium heat, cook the ground beef until browned. Add the chopped onions and garlic, cooking until softened.
  • Stir in the red enchilada sauce, diced green chilies, black beans, corn, chili powder, cumin, salt, and pepper. Simmer for 5-7 minutes.
  • Place a layer of corn tortillas at the bottom of the prepared baking dish.
  • Spoon half of the beef mixture over the tortillas, spreading it evenly.
  • Sprinkle a portion of the shredded cheese on top of the beef mixture.
  • Repeat with another layer of tortillas, the remaining beef mixture, and another layer of cheese.
  • Cover the casserole with aluminum foil and bake for 20 minutes.
  • Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Garnish with chopped cilantro before serving. Enjoy!
